Food Grade vs Industrial Grade Xanthan Gum: Differences

Food-grade and industrial-grade xanthan gum are produced through similar fermentation processes, but differ significantly in purity, safety standards, heavy metal limits, microbiological control, production environment, and intended applications. These differences directly determine whether they are safe for human consumption.

1.Safety&Hygiene Standards

Food Grade

Produced in strict GMP-compliant facilities;meets food safety regulations such as FDA,FCC,GB 1886.41,EFSA(E415).

Strictly controlled for pathogenic bacteria, total plate count, yeast, mold, salmonella, and E.coli.

Industrial Grade

Produced under general industrial conditions, with no food-grade hygiene requirements.

Microbial limits are much looser and not suitable for ingestion.

2.Heavy Metals&Impurities

Food Grade

Extremely low limits for lead, arsenic, mercury, cadmium and other heavy metals.

Purified to remove residual proteins, pigments, and organic impurities.

Industrial Grade

Higher heavy metal content;contains more residual impurities and colorants.

Does not meet food-contact safety standards.

3.Viscosity&Stability

Food Grade

Stable and consistent viscosity(typically 1200–1600 mPa·s),with uniform particle size and reliable hydration performance.

Industrial Grade

Viscosity varies widely;may contain unfermented residues that affect solubility and stability.

4.Particle Size&Solubility

Food Grade

Available in 80 mesh,200 mesh, with good dispersion and low clumping.

Industrial Grade

Usually coarse, irregular particles;slower dissolution and more agglomeration.

5.Applications

Food Grade

Used in foods,beverages,gluten-free baking,dairy products,sauces,dietary supplements,and cosmetics.

Industrial Grade

Used in oil drilling fluids,paint thickeners,ceramics,textiles,paper making,water treatment,and other non-food industrial fields.

6.Price

Food Grade:Higher cost due to purification, testing, and certification.

Industrial Grade:Lower cost due to simpler processing and fewer controls.

Summary

The core difference is food safety and purity.

Industrial-grade xanthan gum must never be used in food or oral products,as it may contain harmful impurities and microorganisms.Only food-grade xanthan gum is legally and safely used in human food.
