Particle Size Options for Food Grade Xanthan Gum Powder

Food grade xanthan gum powder is commercially available in several standard particle size grades,expressed in mesh or micrometer(μm)units.These grades do not alter the fundamental viscosity or functional performance of xanthan gum,but directly influence dispersion behavior,hydration speed,and final product texture.

The most common particle size options are:

80 mesh:Coarse grade,particle size around 180μm.It disperses easily with less clumping,hydrates moderately,and is widely used in general food applications such as sauces,bakery products,and dairy products.

200 mesh:Fine grade,particle size approximately 75μm.It dissolves and hydrates very quickly,producing a smoother texture,making it suitable for clear beverages,instant products,and formulations requiring high homogeneity.

100 mesh/120 mesh:Intermediate grades,balancing dispersibility and dissolution speed,often used in customized industrial applications.

Proper selection of particle size helps avoid agglomeration(fish eyes)during mixing and ensures consistent texture in the finished food product.
